Ingredients

  • 1 1/3 cups plus 1/2 cup reduced-sodium chicken broth, divided
  • 2/3 cup quinoa, rinsed
  • 1 tablespoon canola oil
  • 1 medium sweet potato, diced
  • 1 medium onion, chopped
  • 1 celery rib, chopped
  • 1 cup frozen peas
  • 2 cloves garlic, minced
  • 1 teaspoon fresh gingerroot, minced
  • 3 teaspoons curry powder
  • 1/4 teaspoon salt
  • 2 cups chicken, cooked and shredded

Directions

Step 1 –In a medium saucepan, add 1 1/3 cups of the chicken broth and bring it to a boil.

Step 2 –Add the quinoa to the chicken broth.

Step 3 –Reduce the heat to low and simmer, covered, until the liquid is absorbed, about 12-15 minutes.

Step 4 –In a large skillet over medium-high heat, add the canola oil.

Step 5 –Add the sweet potatoes, the onion, and the celery to the heated canola oil and sauté until the sweet potatoes are tender, about 10-12 minutes.

Step 6 –Add the frozen peas, the garlic, the gingerroot, the curry powder, and the salt to the sweet potato mixture and cook, stirring, until tender, about 2 minutes.

Step 7 –Add the chicken and the remaining chicken broth to the sweet potato mixture, stirring to combine, and cooking until heated through.

Step 8 –Add the cooked quinoa to the sweet potato mixture, stirring to combine, and cook just until heated through, about 1 minute.

Step 9 –Plate and serve.
