10-Minute Apple Pie Breakfast

Speed and sweetness; that’s the promise of this 10-Minute Apple Pie Breakfast! It’s even in the name! In less than 15 minutes, you have creamy, lightly sweetened oatmeal, with tender, jammy, cinnamon-spiced apples piled on top! It’s the experience of slicing into a fresh pie without the work or the stress… or the calories. 10-Minute Apple Pie Breakfast is healthy and hearty, but also dessert-levels of deliciousness!

Ingredients

For the apples:

  • 2/3 cup apples, optionally peeled, diced
  • 1 teaspoon cinnamon
  • 1/2 teaspoon vanilla
  • 1 tablespoon coconut oil
  • 1 tablespoon water

For the oatmeal:

  • 1/2 cup water, plus more, to taste
  • 1/2 cup quick-cooking oats
  • 1 tablespoon coconut cream

Directions

Step 1 –In a small cooking pot over medium heat, add the apples, the cinnamon, the vanilla, and 1 tablespoon of the coconut oil and cook, while stirring, until completely combined and the apples are beginning to soften, about 2-3 minutes.

Step 2 –Add 1 tablespoon of the water to the apple mixture and cook, while stirring, until the apples have completely softened, about 2-3 minutes.

Step 3 –Transfer the apple mixture to a plate.

Step 4 –In the same pot over medium-high heat, add 1/2 cup of the water and the oats, adding more of the extra water as needed to ensure the oats are just covered.

Step 5 –Cook the oat mixture until the oats start to soften, about 2-3 minutes.

Step 6 –Add the coconut cream to the oat mixture and cook, while stirring, until the oats are cooked through and have absorbed most of the liquid, about 2-3 minutes.

Step 7 –Transfer the oatmeal to a bowl.

Step 8 –Top the oatmeal with the apple mixture.

Step 9 –Serve.
