Ingredients

For the dressing:

  • 3 tablespoons Champagne vinegar
  • 1 1/2 tablespoons walnut or olive oil
  • 2 teaspoons honey
  • 1/4 teaspoon mustard powder

For the salad:

  • 4 cups kale, stems removed, finely shredded
  • 1 bell pepper, sliced
  • 1 1/2 cups watermelon, cut into small cubes
  • 1 carrot, chopped
  • 1 1/2 cups blueberries
  • 1/4 cup walnuts, chopped
  • 1/2 cup pumpkin seeds

Directions

Step 1 –Whisk the Champagne vinegar, the walnut oil, the honey, and the mustard powder together, ensuring the honey has dissolved and the dressing is thoroughly mixed.

Step 2 –In a large bowl, add the kale, then pour the dressing over the kale and mix thoroughly.
