Ingredients

  • 2 large eggs, room temperature
  • 1 egg white, room temperature
  • 1/2 cup sugar, divided
  • 1/2 teaspoon vanilla
  • 1 cup all-purpose flour
  • salt, to taste
  • powdered sugar, optional, to taste, for dusting

Directions

Step 1 –Preheat the oven to 375 degrees F.

Step 2 –Line 2 cookie sheets with parchment paper, and set it aside.

Step 3 –Separate the eggs, placing the yolks in a large bowl and the whites in a stand mixer fitted with a whisk attachment.

Step 4 –Using a large whisk or hand mixer, whip the egg yolks with 1/4 cup of the sugar until they are pale and fluffy.

Step 5 –Beat in the vanilla.

Step 6 –Set the egg yolk mixture aside.
