Spicy pork sausage, sweet green peppers, salty cheddar cheese, sharp ground mustard, and of course, the good ‘ole faithful scrambled eggs, make up the rest! Whip it up the night before and enjoy Breakfast Strata the next morning in 30 minutes! See? It’s a casserole worth repeating!

Ingredients

  • 1 (16-ounce) loaf herb or cheesy bakery bread, cubed
  • 1 pound bulk pork sausage
  • 1 medium green pepper, chopped
  • 1 medium onion, chopped
  • 1 cup cheddar cheese, shredded
  • 6 large eggs
  • 1 teaspoon ground mustard
  • 2 cups 2% milk

Directions

Step 1 –Grease a 9×13-inch baking dish.

Step 2 –Place the bread cubes in the baking dish.

Step 3 –In a large skillet over medium-high heat, add the sausage, the green peppers, and the onions, while crumbling the meat, until the sausage is no longer pink and the veggies are tender, for about 5-7 minutes.

Step 4 –With a slotted spoon, place the sausage mixture over the bread cubes.

Step 5 –Sprinkle evenly with the cheddar cheese.

Step 6 –In a large bowl, whisk together the eggs, the ground mustard, and the milk.

Step 7 –Pour the egg mixture over the top of the sausage mixture.

Step 8 –Cover and refrigerate for at least 8 hours and up to overnight.

Step 9 –Preheat the oven to 350 degrees F.

Step 10 –Bake the strata uncovered until a knife or toothpick inserted into the center comes out clean, about 30-35 minutes.
