Ingredients

  • 3/4 cup butter, softened
  • 1 cup sugar
  • 1 large egg, room temperature
  • 1/4 cup dark molasses
  • 2 1/4 cups all-purpose flour
  • 2 teaspoons ground ginger
  • 1 teaspoon baking soda
  • 3/4 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon salt
  • additional sugar, for coating

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –In a large bowl, cream together the butter and sugar until light yellow in color and fluffy. This is critical for getting the perfect texture.

Step 3 –Beat in the egg and molasses.

Step 4 –In a separate bowl, combine the flour, ginger, baking soda, cinnamon, cloves, and salt.

Step 5 –Gradually add the flour mixture to the butter and sugar mixture, mixing it constantly, until well incorporated.

Step 6 –Roll the dough into 1-1/2-inch balls.

Step 7 –Roll the dough balls in the additional sugar.

Step 8 –Place the dough balls onto an ungreased baking sheet, about 2 inches apart from each other so they have room to expand.

Step 9 –Bake until puffy and lightly browned, about 10-12 minutes.

Step 10 –Remove the cookies from the oven and let them cool on a wire rack.

Step 11 –Serve warm or at room temperature.
