Ingredients

  • 2 cups flour
  • 3 tablespoons sugar
  • 4 teaspoons baking powder
  • 1 teaspoon salt
  • 2 cups milk
  • 2 eggs
  • 4 tablespoons butter, divided
  • 2 cups trail mix, of your choice

Directions

Step 1 –Whisk together the flour, sugar, baking powder, and salt.

Step 2 –Measure 2 cups of the dry ingredients mixture and pour it into a medium mixing bowl.

Step 3 –Add the milk and the eggs to the medium mixing bowl, whisking to incorporate but careful not to overmix. The batter should be lumpy.

Step 4 –Heat a large skillet on the stove-top over medium heat.

Step 5 –Melt 1 tablespoon of the butter on the skillet until foamy.

Step 6 –Pour 1/3 cup of the batter per pancake onto the skillet.

Step 7 –Sprinkle each pancake with 1-2 tablespoons of the trail mix.

Step 8 –Cook until the surface of the pancakes has bubbles, about 1-2 minutes.

Step 9 –Flip the pancakes until all sides are golden brown, about 1-2 minutes.

Step 10 –Serve hot!
