The Best Blueberry Banana Bread for Every Occasion

Blueberry Banana Bread is about to take all your rainy day blues and turn them into rays of sunshine! Fresh, beautiful blueberries are folded in to add a little pop of color and a big sensation of flavor. Warm and tasty with a hint of melty butter, Blueberry Banana Bread is a delightful treat to enjoy while the sun rises!

Ingredients

  • 2 bananas, ripe and smashed
  • 1/3 cup Greek yogurt
  • 1/3 cup butter, melted, plus more, to taste, for greasing the dish
  • 3/4 cup sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • salt, to taste
  • 1 1/2 cups all-purpose flour
  • 1/2 cup blueberries

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Using the extra butter, grease a 4×8-inch loaf pan, then line the pan with parchment paper.

Step 3 –Using the extra butter, grease the parchment paper.

Step 4 –In a large bowl, mix the bananas, the yogurt, and the remaining 1/3 cup of the butter using a wooden spoon or fork.

Step 5 –Add the sugar, the egg, and the vanilla and mix.

Step 6 –Sprinkle the baking soda and the salt over the batter and mix in.

Step 7 –Add the flour to the batter and mix just enough to blend, do not overmix.

Step 8 –Fold the blueberries into the batter until evenly distributed.

Step 9 –Pour the batter into the prepared pan.

Step 10 –Bake until a knife inserted in the center comes out clean, about 1 hour.

Step 11 –Cool the bread on a wire rack in the pan.

Step 12 –Transfer the bread from the pan and slice.

Step 13 –Serve.
