Nothing-Better Buttermilk Banana Bread

Ingredients

  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 cup ripe bananas, mashed
  • 1/4 cup buttermilk
  • 1/2 teaspoon vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon baking soda

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Coat a 9x5x3-inch loaf pan with nonstick cooking spray.

Step 3 –In a bowl of a stand mixer or a large bowl with a hand mixer, add the butter and the granulated sugar and beat to combine.

Step 4 –Add the eggs, the mashed bananas, the buttermilk, and the vanilla extract to the butter-sugar mixture and beat to combine.

Step 5 –Add the flour, the baking powder, the salt, and the baking soda to the batter mixture and mix until just combined.

Step 6 –Add the batter to the prepared loaf pan.

Step 7 –Bake until a toothpick inserted into the center of the bread comes out clean, about 50-55 minutes.

Step 8 –Transfer the baked bread from the oven to a wire rack and let it cool in the pan, about 15 minutes.

Step 9 –With a knife, loosen the bread around the edges and carefully transfer it to the wire rack to cool completely.

Step 10 –With a serrated knife, cut the cooled bread into serving-size slices and serve.
