Ingredients

  • 6 eggs
  • 1/4 cup milk
  • salt, to taste
  • pepper, to taste
  • 1/2 green pepper, diced
  • 4 tablespoons unsalted butter, divided
  • 6 medium soft tortilla shells
  • 3/4 cup cheddar cheese, shredded, divided
  • 6 slices bacon, cooked and roughly chopped
  • sour cream, optional, to taste, for serving

Directions

Step 1 -In a medium bowl, add the eggs, the milk, the salt, and the pepper, and whisk to combine

Step 2 -Add the green peppers and stir to combine.

Step 3 -In a large skillet over medium heat, melt 2 tablespoons of the butter over medium heat.

Step 4 -Add the egg mixture to the melted butter and cook, stirring often, until no longer runny, about 4-5 minutes.

Step 5 -Transfer the egg mixture to a clean plate.

Step 6 -In the same skillet over medium heat, melt the remaining butter.

Step 7 -Place 1 of the tortilla shells in the middle of the pan and top it with 1/4 cup of the cheese leaving a 1/2-inch border around the edges.

Step 8 -Spread about 1/3 of the egg mixture and 1/3 of the bacon in even layers on top of the cheese on the tortilla.

Step 9 -Place another tortilla shell on top of the bacon layer and lightly press down.

Step 10 -Heat the quesadilla, flipping once until the shell is slightly golden and the cheese is melted, about 2-3 minutes per side.

Step 11 -Transfer the cooked quesadilla to a plate and repeat the process with the remaining tortilla shells, the remaining cheese, the remaining eggs, and the remaining bacon.

Step 12 -Serve with the sour cream.
