When you’re not in the mood to cook or you don’t have a ton of groceries on hand, it’s the perfect time for these Easy Cheesy Quesadillas! This recipe technically only calls for three ingredients, but that doesn’t mean it’s not tasty. Truly no fancy-shmancy dish can ever outshine the perfection that is a toasty tortilla filled with some melty, gooey cheese. It gets even better with the bonus ingredients you decide to add on top. Mmm, Easy Cheesy Quesadillas are a real winner every time hunger strikes!
Ingredients
For the quesadillas:
- 2 teaspoons olive oil
- 2 (8-inch) flour tortillas
- 3/4 cup cheddar cheese, finely shredded
Optional, for serving:
- salsa, to taste
- lime wedges, to taste
- fresh cilantro, to taste
Directions
Step 1 –In a large skillet over medium heat, heat the olive oil until it is fragrant.
Step 2 –Add 1 of the tortillas to the oil. Evenly sprinkle it with the cheese and top with the remaining tortilla.
Step 3 –Cook the quesadilla, flipping once, until both sides are crisp and golden-brown, about 3-4 minutes per side.
Step 4 –Transfer the quesadilla to a plate and cut it into fourths.
Step 5 –Serve the quesadilla with the salsa, the lime wedges, and the cilantro.
