Ingredients

  • 2 slices lean bacon, sliced into 1/2-inch pieces
  • 2 (8-inch) flour tortillas
  • 2 tablespoons softened butter,
  • 1 tablespoon pico de gallo
  • 1/4 cup Colby-Monterey jack cheese, shredded
  • 2 cooked chicken breasts, cut into strips
  • sour cream, optional, for topping
  • guacamole, optional, for topping
  • Picante sauce or salsa, optional, for topping

Directions

Step 1 –In a pan on medium heat on the stove-top, fry the bacon, flipping halfway through, until it starts to turn crisp but not hard and brittle, about 6-10 minutes.

Step 2 –Transfer the bacon from the pan onto a paper-towel-lined plate to drain.

Step 3 –Set the bacon aside.

Step 4 –Preheat a non-stick pan on the stove-top over medium heat.

Step 5 –Spread the butter lightly on one side of the flour tortillas.

Step 6 –Place one of the tortillas, buttered side down, into the preheated pan.

Step 7 –Sprinkle the bacon over the tortilla.

Step 8 –Add the pico de gallo on top of the bacon.

Step 9 –Add the Colby-Monterey Jack cheese over the bacon and pico de gallo.

Step 10 –Add the cooked chicken on top of the cheese.

Step 11 –Place the second flour tortilla on top of fixings, buttered side up.

Step 12 –Cook until the inside ingredients are heated through, about 1-2 minutes.

Step 13 –Carefully flip the quesadilla onto the other side and finish cooking, about 1-2 minutes. The quesadilla should be heated through but not browned.

Step 14 –Remove and place on a serving dish.

Step 15 –Cut the quesadilla into individual triangle serving pieces.

Step 16 –Serve the quesadillas with your favorite guacamole, sour cream, and Picante sauce.
