Ingredients

For the bread:

  • 1 cup quick-rolled oats
  • 1 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 cup brown sugar, packed
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1/4 cup packaged fine-shredded sweetened coconut
  • 1 egg
  • 2 tablespoons vegetable oil
  • 1/2 cup low-fat vanilla Greek yogurt
  • 1 teaspoon vanilla
  • 2 apples, such as Gala or Ambrosia, peeled and cored, finely chopped
  • 2 tablespoons water
  • 1/2 cup prunes, pitted
  • 1/2 cup light coconut milk
  • 1/2 cup plus 2 tablespoons walnuts, chopped, divided

For the glaze:

  • 3 tablespoons unsalted butter, cut into pieces
  • 1 1/2 tablespoons heavy cream
  • 1 1/2 tablespoons low-fat cream cheese, room temperature
  • 1/2 cup powdered sugar

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Coat a 9×5-inch loaf pan with nonstick cooking spray.

Step 3 –In a large bowl, combine the oats, the flour, the baking soda, the brown sugar, the cinnamon, the baking powder, and the shredded coconut.

Step 4 –In a second bowl, add the egg and beat with an electric hand mixer until it is fluffy.

Step 5 –Add the vegetable oil to the egg and beat until it is well-combined.

Step 6 –Add the yogurt, the vanilla, and the apples to the egg mixture and stir together.

Step 7 –In a blender or food processor, add the water and the prunes and purée until smooth.

Step 8 –Add the prune purée and the coconut milk to the apple mixture and mix them together.

Step 9 –Add the apple mixture to the oat mixture.

Step 10 –Add 1/2 cup of the walnuts to the batter and mix to combine.

Step 11 –Pour the batter into the prepared loaf pan and sprinkle with the remaining walnuts.

Step 12 –Place the loaf pan on the center rack in the oven and bake until a toothpick inserted into the center comes out clean, about 50 minutes.

Step 13 –Transfer the pan to a wire rack and let it cool, about 5 minutes.

Step 14 –Invert the bread from the pan onto a wire rack to cool completely, about 30 minutes.

Step 15 –In a light-colored pan over medium heat, add the butter pieces and melt, using a heatproof spatula to stir frequently, until the bubbling noise subsides and the butter is golden-brown.

Step 16 –In a small bowl, add the brown butter, the heavy cream, the cream cheese, and the powdered sugar and stir until well-combined.

Step 17 –Evenly spread the glaze over the cooled bread.

Step 18 –Slice and serve.
