America’s Potato Salad

When you have a patriotic spread of burgers, hot dogs, and barbeque chicken all laid out before you, you need the right side dish by their side. It’s time to call on America’s Potato Salad! Chunks of fluffy potato and hearty egg mix and mingle in creamy and tangy mayonnaise for a refreshing side that’s ready to be plated up alongside ribs and poultry. It even has crunchy bites of bell pepper for extra freshness and color! America’s Potato Salad brings a flavor to the table that the nation can be proud of.

Ingredients

  • 5 pounds red potatoes
  • 6 eggs
  • 2 cups mayonnaise
  • 1 onion, diced
  • 2 green onions, thinly sliced
  • 1 small green bell pepper, diced
  • 3 stalks of celery, thinly sliced
  • 2 teaspoons salt
  • 1 teaspoon ground black pepper

Directions

Step 1 –Bring a large pot of water to a boil. Add the potatoes and cook until tender but still firm, about 15-20 minutes.

Step 2 –Drain the potatoes and allow them to cool.

Step 3 –Cut the potatoes into cubes.

Step 4 –Place the eggs in a saucepan and cover them with cold water.

Step 5 –Bring the water to a boil and then immediately remove the saucepan from the heat.

Step 6 –Cover and let the eggs stand in the hot water for 10-12 minutes.

Step 7 –Remove the eggs from the hot water and allow them to cool.

Step 8 –Peel and chop the eggs.

Step 9 –In a large bowl, combine the potatoes and the eggs.

Step 10 –Mix the mayonnaise, the onion, the green onions, the green peppers, and the celery into the potato-egg mixture.

Step 11 –Season with the salt and the pepper, mixing to combine.

Step 12 –Cover and refrigerate the potato salad for at least 2 hours and up to overnight.

Step 13 –Serve chilled.
