  • 1 pound sliced bacon, diced
  • 1 medium sweet onion, chopped
  • 9 large eggs, lightly beaten
  • 4 cups frozen shredded hashbrown potatoes, thawed
  • 2 cups cheddar cheese, shredded
  • 1 1/2 cups small curd cottage cheese
  • 1 1/4 cups Swiss cheese, shredded
  • fresh chives, chopped, optional, for garnish


Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Grease a 9×13-inch baking dish.

Step 3 –Heat a large skillet over medium-high heat.

Step 4 –Add the bacon and the onion to the hot skillet and cook, stirring, until the bacon is browned, about 10 minutes.

Step 5 –Transfer the bacon and the onion to a large bowl.
