Autumn Coleslaw

Every season, it seems there’s some fun excuse to get together. And with every fun gathering usually comes good food. Up your potluck game and make it festive with some Autumn Coleslaw! Your loved ones will be impressed when you come through with a new and improved fall version of the cookout classic. They’ll experience the crunchiness of the veggies, the juiciness of the oranges, and the tanginess of the dressing, and they’ll be thrilled. The deliciousness of Autumn Coleslaw will have the people deeming you the honorary guest, yet little will they know how easy it was for you to make!

Ingredients

  • 3/4 cup cider vinegar
  • 1/4 cup olive oil
  • 1/4 cup light brown sugar
  • kosher salt, to taste
  • black pepper, to taste
  • 1 medium red cabbage, cored, quartered, and thinly sliced
  • 1 large red onion, thinly sliced
  • 1/4 cup fresh flat-leaf parsley, roughly chopped
  • 2 navel oranges, peel removed and cut into half-moons

Directions

Step 1 –In a large bowl, combine the vinegar, the oil, the sugar, the salt, and the pepper and stir until the sugar is dissolved.

Step 2 –Add the cabbage, the onion, and the parsley to the vinegar mixture and toss to combine.

Step 3 –Gently fold the oranges into the cabbage mixture.

Step 4 –Refrigerate, covered, tossing occasionally, for at least 2 hours and up to overnight.

Step 5 –Serve chilled or at room temperature.
