Back-In-My-Day Noodles

Grandpa loved to tell stories from his past. Whether it was about the silliness he and his buddies got into in high school, or the early days of him learning how to farm, he’d always start it out with “back in my day.” We’d tease him for it, but we thoroughly enjoyed it, because he was so good at storytelling and keeping it interesting. He also loved to eat noodles. So, naturally, we had to name Back-In-My-Day Noodles after him. This simple, savory bowl of bouncy noodles is a perfectly comforting main that’s ideal to enjoy while reminiscing about the good ol’ days. These take just about as long to make as it took for him to get from beginning to end of his narrative (which wasn’t too long, but just long enough), and we love that little nod these Back-In-My-Noodles bring to him. Good food and good stories go hand-in-hand, it’s a tale as old as time!

Ingredients

  • 1 quart chicken broth
  • 1 chicken bouillon cube
  • 1 (16-ounce) package wide egg noodles, spiral-shaped or straight
  • 1 (10.5-ounce) can cream of chicken soup
  • 1 stick unsalted butter
  • salt, to taste
  • pepper, to taste
  • dried parsley, to taste, for garnish

Directions

Step 1 –In a large pot with a lid, over medium heat, add the broth and the bouillon cube and bring to a boil, covered.

Step 2 –Add the egg noodles to the boiling broth mixture and stir well to combine. Bring back to a boil.

Step 3 –Add the cream of chicken soup to the noodle mixture and stir well to combine. Bring to a boil, then cook for 2 minutes.

Step 4 –Transfer the pot from the heat and add the butter to the noodle mixture. Stir to combine.

Step 5 –Cover the pot with the lid and let it sit for 20 minutes.

Step 6 –Season the noodle mixture with the salt and the pepper and stir to combine.

Step 7 –Serve the noodle mixture garnished with the parsley.
