Ingredients
- 16 ounces barbeque sauce
- 1/4 cup bourbon
- 2 teaspoons kosher salt
- 1 teaspoon ground white pepper
- 1/2 teaspoon onion powder
- 2 tablespoons paprika
- 1/2 teaspoon garlic powder
- 3 tablespoons dark brown sugar, packed
- 1 tablespoon smoked paprika
- 6 slices bacon, uncooked, cut into small pieces
- 2 pounds chicken thighs, boneless, skinless, cut into 1-inch pieces
Directions
Step 1 –Preheat the grill to medium-high heat.
Step 2 –In a small bowl, combine the barbeque sauce and the bourbon, mixing well.
Step 3 –In a food processor, combine the kosher salt, the white pepper, the onion powder, the paprika, the garlic powder, the dark brown sugar, the smoked paprika, and the bacon.
Step 4 –Pulse the mixture until completely smooth.
Step 5 –In a bowl, add the chicken thigh pieces and rub them with the bacon paste.
Step 6 –Once the chicken is well-coated, thread the chicken thigh pieces onto the skewers.
Step 7 –Place the kebabs on the preheated grill and cook until they are nearly cooked through, about 5 minutes per side.
Step 8 –Brush the kebabs with the bourbon barbeque sauce.
Step 9 –Continue grilling the kebabs until cooked through, about 1 minute per side.
Step 10 –Serve the kebabs with the remaining barbeque sauce.
