Ingredients

  • 4 tablespoons butter, melted and divided
  • 1 pound Italian sausage, casings removed
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1/2 red bell pepper, chopped
  • 1/2 green bell pepper, chopped
  • 1 tablespoon Italian seasoning
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 6 eggs
  • 16 small flour tortillas, whole wheat or white
  • 1 cup cheddar cheese, shredded
  • salsa, optional, for serving
  • sour cream, optional, for serving

Directions

Step 1 –Preheat the oven to 400 degrees F. Lightly grease a 9×13-inch baking dish with 2 tablespoons of the melted butter.

Step 2 –In a large skillet over medium-high heat, cook the sausage until cooked through, about 6-8 minutes.

Step 3 –Drain the excess grease from the skillet.

Step 4 –Add the onion and garlic to the skillet until the onion is soft and fragrant, about 5 minutes.

Step 5 –Add the peppers and cook for 1 minute.

Step 6 –Add the Italian seasoning, salt, and pepper.

Step 7 –Whisk together the eggs in a separate mixing bowl.

Step 8 –Pour the beaten eggs over the sausage mixture.

Step 9 –Cook the eggs until scrambled, about 5 minutes.

Step 10 –Assemble the taquitos by scooping a few tablespoons of the sausage mixture on each of the tortillas.

Step 11 –Top the mixture with the cheddar cheese.

Step 12 –Tightly roll the tortillas.

Step 13 –Place the rolled tortillas into the prepared baking dish.
