These delicious Homemade Chicken Taquitos are perfect as an easy appetizer or for a quick dinner! With warm seasoned chicken and gooey cheese inside, Homemade Chicken Taquitos are the perfect vessels for your favorite toppings like sour cream and guacamole. Ingredients
- 12 corn tortillas
- 1 tablespoon taco seasoning
- 1 1/2 pounds chicken breast, cooked and shredded
- 2 cups mozzarella, shredded
- 2 cups iceberg lettuce, shredded
- 1 cup sour cream, optional
- 1 cup guacamole, optional
- 1 cup pico de gallo, optional
- canola oil, for frying
Directions
Step 1 –Wrap the tortillas in a paper towel.
Step 2 –Warm them in the microwave for about 1 minute.
Step 3 –In a large mixing bowl add together the taco seasoning, shredded chicken breast, and mozzarella.
Step 4 –Using 1 warmed tortilla each time, measure out about 1/3 cup of the chicken filling, ladling it onto the center of the tortilla.
Step 5 –Tightly roll up the tortilla with the filling, sticking a toothpick through the tortilla to hold it together while it fries.
Step 6 –Repeat with the rest of the tortillas
Step 7 –Heat up the canola oil over medium heat in a skillet or pan until the oil is glistening.
Step 8 –Gently fry the prepared tortillas in small batches until they are a light brown, rotating them every 1-2 minutes., about 4 minutes.
Step 9 –Transfer the fried tortillas to a plate.
Step 10 –Top with the shredded lettuce, sour cream, guacamole, and pico de gallo.
Step 11 –Serve!
