Basic Chicken Salad

If you’re like us, we don’t like to put too much work into making our lunch. But of course, we want it to taste good… there’s no room for boring lunches here! This Basic Chicken Salad came together with that inspiration and don’t worry, it’s only “basic” because it’s just so easy to throw together. We love the tempting blend of chicken tossed with crunchy celery and toasted almonds. It’s the perfect refreshing option for any day of the week! Sometimes we put it over some greens, other times we pile it on some salty crackers, and shoot, every now and then, we just eat it as is! Basic Chicken Salad gives us the options we need without too much of a hassle, which is why we think it’s the best craving ever!

Ingredients

  • 1/2 cup almonds, blanched and slivered
  • 1/2 cup mayonnaise
  • 1 tablespoon lemon juice
  • 1/4 teaspoon ground black pepper
  • 2 cups chicken meat, cooked and chopped
  • 1 stalk celery, chopped

Directions

Step 1 –Place the almonds in a frying pan and toast, shaking frequently, over medium-high heat. Be careful as the nuts can burn quickly.

Step 2 –In a medium bowl, mix the mayonnaise, the lemon juice, and the pepper.

Step 3 –Toss the sauce with the chicken, the toasted almonds, and the celery.

Step 4 –Serve.
