Best Beginnings Casserole

Ingredients

  • 1 pound (2 large or 3 medium-sized) sweet potatoes, peeled and diced into 1/2-inch cubes
  • 1 tablespoon olive oil
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • 1/4 teaspoon cumin
  • kosher salt, to taste
  • ground black pepper, to taste
  • 8 ounces bacon slices
  • 1 pound breakfast sausage
  • 1/2 large onion, diced
  • 1 green bell pepper, diced
  • 2 cloves garlic, minced
  • cheese, optional, to taste, of your choice, shredded
  • 12 large eggs
  • 1/3 cup milk
  • green onions, optional, to taste, sliced, for garnish

Directions

Step 1 –Preheat the oven to 400 degrees F.

Step 2 –On a baking sheet, add the sweet potatoes, the olive oil, the garlic powder, the paprika, the cumin, the salt, and the pepper and toss to combine and coat.

Step 3 –On a separate sheet pan, add the bacon slices.

Step 4 –Bake both sheet pans until the bacon is crispy, about 15-20 minutes.

Step 5 –Transfer the bacon from the oven to a paper-towel-lined plate.

Step 6 –Stir the sweet potatoes and continue baking until tender and golden, about an additional 15 minutes.

Step 7 –While the sweet potatoes continue to bake, in a skillet over medium-high heat, add the breakfast sausage and cook until browned, about 5-6 minutes.

Step 8 –Using a slotted spoon, transfer the sausage to a 9×13-inch casserole dish.

Step 9 –Reserve 1 tablespoon of the drippings in the pan, draining the remainder.

Step 10 –Add the onions and the bell peppers and cook until they begin to soften, about 4-5 minutes.

Step 11 –Add the garlic and cook until fragrant, about 1 minute.

Step 12 –Transfer the onion mixture to the casserole dish.

Step 13 –Crumble the bacon over the onion mixture.

Step 14 –Add the sweet potatoes to the casserole dish.

Step 15 –Sprinkle the shredded cheese over the sweet potatoes.

Step 16 –Season the casserole mixture with the salt and the pepper.

Step 17 –Stir all of the ingredients together.

Step 18 –In a mixing bowl, add the eggs and the milk and whisk until lightly frothy.

Step 19 –Pour the egg-milk mixture over the casserole mixture.

Step 20 –Bake until the center is cooked through and the edges are slightly golden, about 25-30 minutes.

Step 21 –Sprinkle with more of the cheese and the green onions and serve.
