It’s so refreshing and makes the perfect side salad, with every bite, you’re sure to be filled with more and more “hop-timism” that you made a good choice for your meal! Ingredients
For the dressing:
- 3 tablespoons mayonnaise
- 3 tablespoons coarse grain Dijon mustard
- 3 tablespoons apple cider vinegar
- 3 tablespoons honey
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
For the salad:
- 2 (10-ounce) bags matchstick carrots
- 1 red apple, cut into matchsticks
- 1/2 cup toasted pecans, chopped
- 1/2 cup raisins
- 2 tablespoons fresh parsley, chopped
Directions
Step 1 –In a medium bowl, add the mayonnaise, the Dijon mustard, the apple cider vinegar, the honey, the salt, and the pepper and mix until smooth.
Step 2 –Add the carrots, the apple, the pecans, the raisins, and the parsley to the dressing mixture and toss together to coat.
Step 3 –Serve.
