Honey Cake

Ingredients

For the honey cake:

  • 1/2 cup butter, softened
  • 1 cup honey
  • 2 large eggs, room temperature
  • 1/2 cup plain yogurt
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt

Optional, for serving:

  • honey, to taste
  • assorted fresh fruit, such as raspberries and blackberries, to taste
  • pistachios, to taste, chopped

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Grease a 9-inch cast-iron skillet.

Step 3 –In a large bowl, add the butter and 1 cup of the honey and beat until blended.

Step 4 –Add the eggs to the butter mixture, 1 at a time, and beat well after each addition.

Step 5 –Add the yogurt and the vanilla to the butter mixture and beat to combine.

Step 6 –In a separate bowl, add the flour, the baking powder, and the salt and whisk to combine.

Step 7 –Add the flour mixture to the butter mixture and beat until just combined.

Step 8 –Pour the batter into the prepared skillet.

Step 9 –Bake until a toothpick inserted into the center comes out clean, about 30-35 minutes.

Step 10 –Allow the cake to cool completely in the skillet.

Step 11 –Serve the cake topped with the remaining honey, the fruit, and the pistachios.
