Ingredients
- 8 ounces gluten-free penne pasta or whole-wheat penne pasta
- 2 tablespoons extra-virgin olive oil
- 1 pound chicken breast or thighs, boneless and skinless, trimmed and cut into bite-size pieces
- 1/2 teaspoon salt
- 1/4 teaspoon ground pepper
- 4 cloves garlic, minced
- 1/2 cup dry white wine
- juice and zest of 1 lemon
- 10 cups fresh spinach, chopped
- 4 tablespoons parmesan cheese, grated
Directions
Step 1 –In a large pot of salted boiling water, cook the pasta to al dente, according to the package directions, and drain it.
Step 2 –While the pasta is cooking, heat the oil in a large high-sided skillet over medium-high heat.
Step 3 –Add the chicken pieces, the salt, and the pepper to the oil and cook, stirring occasionally, until they reach an internal temperature of 165 degrees F, about 5-7 minutes.
Step 4 –Add the garlic to the chicken pieces and stir until fragrant, about 1 minute.
Step 5 –Stir the wine, the lemon juice, and the lemon zest into the chicken mixture and bring to a simmer.
Step 6 –Transfer the skillet from the heat and stir in the spinach and the cooked pasta.
Step 7 –Cover the skillet and let the pasta mixture stand, just until the spinach has wilted.
Step 8 –Top the pasta mixture with the parmesan cheese and serve.
