Ingredients

  • 5 pounds red potatoes, skin-on, diced
  • 1 stick butter
  • 8 ounces sour cream
  • 1 teaspoon garlic, minced
  • 1/4 teaspoon black pepper
  • 1 1/2 teaspoons salt
  • 1/4 cup heavy cream

Directions

Step 1 –In a medium Dutch oven, add the potatoes and enough cold water to cover them and bring them to a slow boil over medium-high heat.

Step 2 –Reduce the heat to low and boil until the potatoes are tender, about 30 minutes.

Step 3 –Drain the potatoes in a colander and return them to the Dutch oven.

Step 4 –Break the potatoes up with an electric mixer or a potato mixer, being careful not to beat them too hard, to prevent them from becoming gummy.

Step 5 –Add the butter, the sour cream, the garlic, the pepper, and the salt to the potatoes and mix with an electric mixer on low speed until they are just blended.

Step 6 –Gradually add the heavy cream to the potatoes and gently mix them until the mashed potatoes have reached the desired consistency.
