One-Pot Lemon Garlic Shrimp

Here’s a dish that’s uplifting in every sense of the word! One-Pot Lemon Garlic Shrimp has tender, pink, sweet and savory shrimp in a bed of bouncy linguine and paired with a refreshing lemon sauce. Throw in some parmesan cheese and it doesn’t get much better… except it does! One-Pot Lemon Garlic Shrimp only needs 30 minutes to make and only uses one pot, so cleanup is a breeze too. Things are looking up with this on the table!

Ingredients

  • 8 ounces linguine
  • 2 tablespoons olive oil
  • 8 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 teaspoon red pepper flakes
  • 1 1/4 pounds large shrimp, peeled and deveined
  • salt, to taste
  • pepper, to taste
  • 1 teaspoon dried oregano
  • 4 cups baby spinach
  • 1/4 cup parmesan cheese, grated
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon lemon juice

Directions

Step 1 –In a large pot, boil water.

Step 2 –Add the pasta and cook until al dente according to the package directions.

Step 3 –Drain the pasta and set it aside.

Step 4 –In the same pot, heat the olive oil and 2 tablespoons of the butter over medium heat.

Step 5 –Add the garlic and the crushed red pepper and cook until fragrant, about 1 minute.

Step 6 –Toss in the shrimp, the salt, and the pepper and cook until the shrimp starts to turn pink but is not fully cooked, about 1-2 minutes per side.

Step 7 –Add the oregano and the spinach and cook until wilted, about 1 minute.

Step 8 –Add the cooked pasta, the remaining butter, the parmesan, and the parsley to the pot and stir until well-mixed and the butter is melted.

Step 9 –Continue to cook until the shrimp is fully cooked, about 1-2 minutes per side.

Step 10 –Add the lemon juice and mix.

Step 11 –Serve.
