Ingredients
- 2-3 pounds roast or eye round cut, fat trimmed
- 3-4 cloves garlic, thinly sliced
- olive oil, for brushing

Directions
Step 1 –Allow the roast to sit, covered, until it reaches room temperature, about 1 hour.
Step 2 –Preheat the oven to 350 degrees F.
Step 3 –Using a sharp knife, pierce the roast several times, making each piercing about 1/2-inch deep and set about 1-inch apart.
