Better Scrambled Eggs

It’s breakfast, and you shouldn’t just settle for ordinary scrambled eggs. You need a next-level breakfast for a next-level day! Better Scrambled Eggs are the creamiest, fluffiest, most tender scrambled eggs you could imagine! But that’s not all, they wouldn’t be Better Scrambled Eggs if they didn’t include some accompaniments. The eggs are enfolded with succulent and salty salmon, creamy goat cheese, and seared asparagus for true indulgence. Enjoy breakfast, better!

Ingredients

  • 1 tablespoon butter
  • 8 stalks asparagus, woody bottoms removed, chopped into 1-inch pieces
  • salt, to taste
  • pepper, to taste
  • 8 eggs
  • 2 tablespoons fat-free milk
  • 1/4 cup fresh goat cheese, crumbled
  • 4 ounces smoked salmon, chopped

Directions

Step 1 –Heat the butter in a large, nonstick skillet or sauté pan over medium heat until it has melted.

Step 2 –When the butter begins to foam, add the asparagus and cook until just tender, about 3-4 minutes.

Step 3 –Season the asparagus with the salt and the pepper.

Step 4 –Crack the eggs into a large bowl and whisk them with the milk.

Step 5 –Season the egg mixture with the salt and the pepper.

Step 6 –Add the egg mixture to the pan with the asparagus.

Step 7 –Reduce the heat to low and, using a wooden spoon, constantly stir and scrape the eggs until they begin to form soft curds, about 5 minutes.

Step 8 –About 1 minute before the eggs are done, stir in the goat cheese.

Step 9 –Transfer the eggs to a plate while still soft and creamy.

Step 10 –Fold in the salmon.

Step 11 –Let the scrambled eggs rest until they solidify, about 2 minutes.
