Dinner Party Bake

Ingredients

  • 2 cups multi-grain penne pasta, uncooked
  • 1 pound chicken breasts, boneless, skinless, and cut into bite-sized pieces
  • 1 1/4 cups salsa, thick and chunky
  • 1 cup frozen corn
  • 1 large green pepper, cut into strips
  • 1 cup Mexican blend cheese, shredded

Directions

Step 1 –In a large boiling pot of salt water, cook the pasta according to the package directions. Drain.

Step 2 –While the pasta is cooking, in a large nonstick skillet coated with cooking spray over medium heat, cook the chicken, while stirring, about 2 minutes.

Step 3 –Stir the salsa, the corn, and the peppers into the chicken mixture and bring to a boil.

Step 4 –Lower the temperature to medium-low and simmer, stirring occasionally, until the chicken’s internal temperature reads 165 degrees F, about 10 minutes.

Step 5 –Add the cooked pasta to the chicken mixture and lightly mix.

Step 6 –Top the pasta mixture with the cheese.

Step 7 –Transfer the skillet away from the heat and cover.

Step 8 –Let the skillet stand until the cheese has melted, about 1 minute.

Step 9 –Serve.
