Ingredients

For the crumb:

  • 3 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup unsalted butter, cold and cut into small cubes
  • 1 egg

For the blueberry filling:

  • 1/2 cup granulated sugar
  • 4 teaspoons cornstarch
  • 3 tablespoons lemon juice
  • 4 cups fresh blueberries

Directions

Step 1 –Preheat the oven to 375 degrees F.

Step 2 –Lightly grease a 9×13-inch baking pan.

Step 3 –In a medium bowl, whisk together the flour, 1 cup of the granulated sugar, the baking powder, and the salt.

Step 4 –Using a fork or a pastry cutter, cut in the butter. Try to keep the butter as cold as possible as you combine it.

Step 5 –Blend in the egg until a crumbly dough forms.

Step 6 –Press 1/2 of the dough into the prepared pan.

Step 7 –In a separate large bowl, whisk together the remaining granulated sugar with the cornstarch and the lemon juice.

Step 8 –Gently fold in the blueberries, making sure they are evenly coated in the sugar mixture.

Step 9 –Spread the blueberry mixture evenly over the crust in the pan.
