Blueberry Delight

You don’t have to live in Florida to enjoy this sweet little treat year-round. Blueberry Delight is a welcome sight at any picnic or banquet table, from sea to shining sea. Sure, Florida is always the first to show off their blueberry patch bounty, but this simple dessert is just a cabinet shelf away whenever you get that tart blueberry craving. When you combine luscious blueberries and a sweet cream cheese layer of bliss atop a pecan piecrust, well, it just doesn’t get much better than that. It doesn’t have to be March in the Sunshine State to get this berry party started. Make Blueberry Delight the next time you need a blueberry pick-me-up. It will be simply delightful!

Ingredients

  • 2 (8-ounce) packages cream cheese, slightly softened
  • 2 (1.3-ounce) envelopes whipped topping mix
  • 1 cup whole milk
  • 1 teaspoon vanilla extract
  • 2 cups confectioners’ sugar
  • 1 premade store-bought pecan piecrust, baked and cooled
  • 2 (21-ounce) cans blueberry pie filling
  • whipped cream, optional, to taste

Directions

Step 1 –In a large bowl, use an electric hand mixer to beat the cream cheese until it is smooth.

Step 2 –In the bowl of a stand mixer with the paddle attachment, add the whipped topping mixes, the milk, and the vanilla extract and beat until soft peaks begin to form, about 4 minutes.

Step 3 –Add the whipped cream cheese and the confectioners’ sugar to the whipped topping mixture and mix until it is smooth and creamy, about 3-5 minutes.

Step 4 –Evenly spread the cream cheese filling into the piecrust.

Step 5 –Evenly spread the blueberry pie filling over the cream cheese filling.

Step 6 –Cover the pie tightly and refrigerate for at least 4 hours and up to overnight.

Step 7 –Slice the pie and serve it with the whipped cream.
