Breakfast Delight Casserole

What makes a good morning great? Is it the birds chirping their sunrise song? Is it the anticipation of what’s to come? There’s a lot to it, right?! Well, when you want to add a little joy to the start of your day, this Breakfast Delight Casserole is just perfect. Loaded with all your morning favorites, like fluffy eggs, crispy bacon, melty cheese, crisp veggies, and tender potatoes, it’s quite impossible not to feel joy with this bountiful bake on your plate. It is a good morning, indeed, with Breakfast Delight Casserole!

Ingredients

  • 1 pound bacon, cut into 1/2-inch-thick strips
  • 1 yellow onion, diced
  • 1 red bell pepper, diced
  • 3 cloves garlic, minced
  • 12 large eggs
  • 1 cup milk
  • 3 cups frozen diced potatoes
  • 2 cups cheddar cheese, shredded, divided
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon black pepper
  • 2 green onions, chopped

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Coat a 9×13-inch baking dish with nonstick cooking spray.

Step 3 –In a large skillet over medium heat, cook the bacon strips, flipping occasionally, until they are crispy and browned.

Step 4 –Transfer the cooked bacon strips to a paper-towel-lined plate to cool.

Step 5 –Roughly chop the cooled bacon strips and set them aside.

Step 6 –In the same skillet over medium heat, add the onions and the red peppers and cook until they are tender.

Step 7 –Add the garlic to the onion-pepper mixture and cook, about 2 minutes. Transfer the skillet from the heat.

Step 8 –In a large bowl, add the eggs and the milk and beat to combine.

Step 9 –Stir the veggie mixture, the potatoes, and 1 cup of the shredded cheese into the egg mixture.

Step 10 –Reserve 3/4 cup of the chopped bacon and stir the remaining bacon into the egg mixture.

Step 11 –Add the salt and the pepper to the egg mixture and stir to combine.

Step 12 –Pour the egg mixture into the prepared baking dish and sprinkle with the remaining cheese.

Step 13 –Bake the casserole, about 20 minutes.

Step 14 –Sprinkle the reserved bacon and the green onions over the casserole and bake until the eggs are firm and the top is slightly brown, about 20-30 minutes.

Step 15 –Transfer the baking dish to a wire rack and let the casserole cool, about 10 minutes.

Step 16 –Serve.
