Loaded with green chiles, plum tomatoes, mozzarella cheese, a tasty egg ensemble, and a little sausage, the first gathering of the day is going to be a really good one! Ingredients
- 2 cups bread crusts, cubed
- 1 1/2 cups Hatch® diced green chiles
- 2 medium plum tomatoes, thinly sliced
- 2 ounces mozzarella or provolone cheese, sliced
- 1 tablespoon cilantro, chopped, divided
- 2 tablespoons olive oil
- 6 large eggs
- 1 1/2 cups almond milk
- 1 teaspoon seasoning mix, such as adobo seasoning
- 1 cup sausage or chicken, cooked and diced
- salt, to taste
- black pepper, to taste
Directions
Step 1 -Preheat the oven to 350 degrees F.
Step 2 -Lightly coat a 9×13-inch baking dish with nonstick cooking spray.
Step 3 -Add the bread cubes to the bottom of the prepared baking dish and top with an even layer of the chiles, the plum tomatoes, the mozzarella cheese, and 1/2 tablespoon of the cilantro.
Step 4 -Drizzle the olive oil over the cilantro layer.
Step 5 -In a large bowl, add the eggs, the almond milk, the seasoning mix, the sausage, the salt, and the black pepper and beat until it is well-combined.
Step 6 -Pour the egg mixture over the top and bake until the eggs are set, about 30-45 minutes.
Step 7 -Transfer the baking dish to a wire rack and sprinkle with the remaining cilantro.
Step 8 -Serve.
