Bruschetta Pasta

Few appetizers are as refreshing and as delicious as a plate of fresh bruschetta piled high with bright, juicy tomatoes. If only you could have it as your main meal… well now you can! Bruschetta Pasta replaces the toast with your favorite tender, bouncy pasta, but leaves the delightfully herbaceous tomato precisely as you remember it. Regular marinara wishes it could taste this fresh and fulfilling! A pinch of sharp, nutty parmesan makes Bruschetta Pasta even more exciting, but what might excite you more is how easy and quick this meal is to make!

Ingredients

  • 10 ounces pasta, of your choice
  • 2 cups tomatoes, finely chopped
  • 2 cloves garlic, minced
  • 1/4 medium onion, finely chopped
  • 6 basil leaves, finely chopped
  • 1 cup parmesan cheese, freshly grated
  • 1/4 cup extra-virgin olive oil
  • salt, to taste
  • pepper, to taste

Directions

Step 1 –Bring a pot of salted water to a boil.

Step 2 –Cook the pasta to al dente in the salted water according to package directions.

Step 3 –Combine the tomatoes, the garlic, the onion, and the basil together in a bowl.

Step 4 –Add the parmesan cheese and the oil to the tomato mixture, stirring to combine.

Step 5 –Once the pasta is cooked, drain the pasta and transfer it to a large bowl.

Step 6 –Pour the bruschetta sauce over the hot pasta and toss to combine.

Step 7 –Taste for seasoning and add salt and pepper to taste.

Step 8 –Serve.
