Ingredients
- 2 1/2 cups water
- 2 tablespoons olive oil or butter, optional
- 10 ounces yellow rice
- 1 (15-ounce) can black beans
- 1/2 teaspoon cumin
- 1/2 teaspoon chili powder
- 2 tablespoons cilantro, chopped, plus more, to taste, for garnish
- 1 lime, juiced
- 1/4 cup sour cream, optional

Directions
Step 1 –In a large saucepan with a tight-fitting lid, bring the water to a boil.
Step 2 –Add the olive oil to the boiling water.
Step 3 –Add the yellow rice and stir for 1 minute while the water is boiling.
Step 4 –Cover tightly and reduce the heat to a simmer.
Step 5 –Cook the rice until tender, about 20-25 minutes.
Step 6 –Rinse the black beans and drain well.
Step 7 –Add the beans to a skillet over medium heat.
Step 8 –Add the cumin, the chili powder, 2 tablespoons of the cilantro, and the lime juice to the beans in the skillet and cook until the beans are heated through, about 5 minutes.
Step 9 –Once the rice is done, stir the warm beans into the rice and top with a dollop of the sour cream.
Step 10 –Garnish with the extra cilantro.
Step 11 –Serve.
