For the cabbage:

  • 1 medium head cabbage, coarsely chopped
  • 2 large onions, chopped
  • 1/4 cup olive oil
  • 3/4 teaspoon salt
  • 3/4 teaspoon pepper
  • 3 tablespoons fresh chives, minced
  • 3 tablespoons fresh tarragon, minced

For the dressing:

  • 2 tablespoons white balsamic vinegar or white wine vinegar
  • 2 tablespoons olive oil
  • 2 tablespoons Dijon mustard
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Step 1 –Preheat the oven to 450 degrees F.

Step 2 –Place the cabbage and the onions in a large bowl.

Step 3 –Drizzle the cabbage mixture with 1/4 cup of the oil, then season with 3/4 teaspoon of the salt and 3/4 teaspoon of the pepper, tossing to coat.

Step 4 –Transfer the mixture to a shallow roasting pan and spread evenly.

Step 5 –Roast, stirring once, until the vegetables are tender and lightly browned, about 30-35 minutes.

Step 6 –Transfer the cabbage mixture to a large bowl and add the chives and the tarragon.
