Caesar Pita Pockets

Caesar Pita Pockets are the classic lunch-on-the-go you can make ahead and enjoy without guilt! Since they’re ready in just 30 minutes, you can easily put together Caesar Pita Pockets and never have to worry about rushing out the door without a meal again. They’re nutritious, low-fat, and low-effort deliciousness!

Ingredients

  • 2 chicken breasts, boneless and skinless
  • 1/3 cup reduced-fat Caesar dressing, divided
  • 1/8 teaspoon pepper
  • 2 cups romaine lettuce, coarsely chopped
  • 1/4 cup carrot, shredded
  • 2 tablespoons parmesan cheese, shredded
  • 2 (6-inch) whole wheat pita breads, cut in 1/2 to form pockets
  • 1 plum tomato, thinly sliced

Directions

Step 1 –Preheat the oven to broil.

Step 2 –Brush both sides of the chicken with 1 tablespoon of the dressing.

Step 3 –Sprinkle the chicken with the pepper then place it on a rack in a broiler pan.

Step 4 –Broil the chicken 4-6 inches from the heat, turning once, until the chicken juices are clear when poked with a knife and the thickest part of the meat reaches 165 degrees F, about 12-15 minutes.

Step 5 –Let the chicken cool for 5 minutes, then cut it into thin slices.

Step 6 –In a medium bowl, toss the lettuce, the shredded carrot, and the cheese with the remaining dressing until coated.

Step 7 –Fill each of the pita pockets with the tomato slices and the chicken.

Step 8 –Add the lettuce mixture to the pitas.

Step 9 –Serve.
