Ingredients
- 1 (8-ounce) package penne pasta
- 1 tablespoon basil oil
- 1 tablespoon olive oil
- 3 cloves garlic, minced
- 1 pint grape tomatoes, halved
- 1 cup Pepper Jack cheese, shredded
- 1 cup mozzarella cheese, shredded
- 1/4 cup parmesan cheese, grated
- 1 tablespoon fresh basil, minced
Directions
Step 1 –In a large pot of boiling water, cook the pasta to al dente, according to the package directions. Drain the pasta.
Step 2 –Heat the basil oil and the olive oil in a large skillet over medium-high heat.
Step 3 –Add the garlic to the skillet and cook until it is soft, about 1-2 minutes.
Step 4 –Add the tomatoes to the garlic, reduce the heat to medium, and simmer the tomato mixture for 10 minutes.
Step 5 –Stir the Pepper Jack cheese, the mozzarella cheese, and the parmesan cheese into the tomato mixture.
Step 6 –Once the cheese begins to melt, add the cooked penne pasta to the tomato mixture and stir to combine.
Step 7 –Sprinkle the fresh basil over the pasta.
Step 8 –Serve.
