Cecilia’s Creamy Celery Soup is, of course, creamy and refreshing with the mild flavor of celery elevating each bite. With the added savoriness of beef bouillon and sharpness of some Mexican cheese, Cecilia’s Creamy Celery Soup is just so wonderfully hospitable. It’s like pulling up a comfy chair and just enjoying life… and in fact, that might be the best way to eat it!
Ingredients
- 4 cups onions, chopped
- 3 1/3 cups water
- 6 ribs celery, chopped
- 4 teaspoons beef bouillon granules
- 3/4 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 cup all-purpose flour
- 1 cup 2% milk
- 1 cup Mexican cheese blend, shredded
- celery leaves, optional, to taste, for garnish
- croutons, optional, to taste, store-bought or homemade, for serving
Directions
Step 1 –In a large saucepan over medium-high heat, add the onion, the water, the celery, the bouillon, the salt, and the pepper and stir to combine.
Step 2 –Bring the soup mixture to a boil.
Step 3 –Reduce the heat to low and cover the saucepan.
Step 4 –Simmer the soup mixture until the vegetables are tender, about 10 minutes.
Step 5 –Transfer the soup mixture to a blender and purée until smooth.
Step 6 –Return the soup mixture to the saucepan over medium heat.
Step 7 –In a bowl, add the flour and the milk and whisk until smooth.
Step 8 –Gradually add the slurry mixture into the soup mixture, while stirring.
Step 9 –Bring the soup mixture to a boil and, while stirring, allow it to boil until thickened, about 2 minutes.
Step 10 –Reduce the heat to low.
Step 11 –Add the cheese and stir until melted.
Step 12 –Serve garnished with the celery leaves and the croutons.
