Ingredients

For the chicken bake:

  • 2 cups rotisserie chicken, cooked and shredded
  • 3 (10-ounce) cans cream of chicken soup
  • 1 cup sour cream
  • 1 cup cheddar cheese, shredded
  • 1/4 cup milk
  • 2 teaspoons garlic, minced
  • 2 tablespoons butter, melted
  • 2 1/2 cups frozen mixed vegetables, thawed
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder

For the biscuit topping:

  • 1 (11.36-ounce) box Red Lobster Cheddar Bay Biscuit® Mix
  • 3/4 cup water
  • 1/2 cup cheddar cheese, shredded
  • 4 tablespoons butter, melted

Directions

Step 1 –Preheat the oven to 425 degrees F.

Step 2 –Spray a 9×13-inch baking dish with nonstick spray.

Step 3 –In a large bowl, mix the chicken, the cream of chicken soup, the sour cream, 1 cup of the cheddar cheese, the milk, the garlic, 2 tablespoons of the melted butter, the vegetable mix, the salt, the black pepper, the garlic powder, and the onion powder.

Step 4 –Pour the filling mixture into the prepared baking dish.

Step 5 –In a medium bowl, place the biscuit mix, keeping the herb seasoning pack separate.

Step 6 –Stir the water and the remaining cheddar cheese into the biscuit mix.

Step 7 –Spoon the biscuit batter on top of the filling mixture and smooth it out evenly.

Step 8 –Bake until the biscuits are cooked through and golden-brown and the filling is heated through, about 16-18 minutes.

Step 9 –In a small dish mix the remaining melted butter and the reserved herb seasoning pack.

Step 10 –Brush the herb butter mixture on top of the bake.

Step 11 –Allow the bake to rest for 5-10 minutes.

Step 12 –Serve.
