Cheesy Foil Fries

Ingredients

  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 teaspoon crushed red pepper flakes
  • kosher salt, to taste
  • freshly ground black pepper, to taste
  • 1 pound red potatoes, cut into 8 long wedges
  • 1 cup sharp cheddar cheese, shredded
  • 2 tablespoons sour cream
  • 2 tablespoons fresh chives, chopped

Directions

Step 1 –Preheat the oven to 400 degrees F.

Step 2 –Generously line a baking sheet with foil.

Step 3 –In a small bowl, whisk the olive oil, the garlic, the red pepper flakes, the salt, and the pepper together.

Step 4 –Place the potato wedges on the prepared baking sheet and fold the four sides of the foil up.

Step 5 –Spoon the olive oil mixture over the potatoes and fold the sides of the foil over the potato wedges so they are covered completely and the packet is sealed closed.

Step 6 –Bake the potatoes until they are tender, about 30-35 minutes.

Step 7 –Transfer the potatoes from the oven and sprinkle them with the cheese.

Step 8 –Switch the oven to broil.

Step 9 –Broil the potatoes until the cheese has melted and the potatoes are crisp, about 2-3 minutes.

Step 10 –Serve the potatoes garnished with the sour cream and the chives.
