Ingredients
- 1 cup panko breadcrumbs
- 1/2 cup parmesan cheese
- 1 tablespoon olive oil
- 1/2 teaspoon black pepper
- 1/4 teaspoon salt
- 1 egg
- 1 tablespoon milk
- 1/4 cup flour
- 1/2 teaspoon garlic powder
- 1 1/2 pounds zucchinis, washed and cut into french-fry-sized strips
Directions
Step 1 -Preheat the oven to 400 degrees F.
Step 2 -Line an 18×26-inch baking sheet with parchment paper.
Step 3 -In a large, shallow bowl, add the panko breadcrumbs, the parmesan cheese, the olive oil, the black pepper, and the salt and mix to combine.
Step 4 -In a second large, shallow bowl, add the egg and the milk and beat to combine.
Step 5 -In a third large, shallow dish, add the flour and the garlic powder and whisk to combine.
Step 6 -Dip each of the zucchini fries into the flour mixture, followed by the egg mixture, then in the breadcrumb mixture, pressing down slightly to allow the crumbs to adhere.
Step 7 -Place the coated zucchini fries on the prepared baking sheet and bake until the crust is crispy, about 14-18 minutes.
Step 8 -Serve.
