Chicken Pasta Skillet Meal

We know that chicken and pasta are a match made in heaven and that anything cooked in a skillet is amazing. So, it’s no surprise that this Chicken Pasta Skillet Meal is such a hit! It’s got all the goods, like al dente pasta and juicy chicken (surprise!) mixed with a light and zesty sauce. There’s a little fresh spinach over here and a little bit of salty parmesan over there to truly create the best dinner dish you’ve ever tasted. You’re sure to fall in love with this Chicken Pasta Skillet Meal! It’s got it all!

Ingredients

  • 8 ounces gluten-free penne pasta or whole-wheat penne pasta
  • 2 tablespoons extra-virgin olive oil
  • 1 pound chicken breast or thighs, boneless and skinless, trimmed and cut into bite-size pieces
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground pepper
  • 4 cloves garlic, minced
  • 1/2 cup dry white wine
  • juice and zest of 1 lemon
  • 10 cups fresh spinach, chopped
  • 4 tablespoons parmesan cheese, grated

Directions

Step 1 –In a large pot of salted boiling water, cook the pasta to al dente, according to the package directions, and drain it.

Step 2 –While the pasta is cooking, heat the oil in a large high-sided skillet over medium-high heat.

Step 3 –Add the chicken pieces, the salt, and the pepper to the oil and cook, stirring occasionally, until they reach an internal temperature of 165 degrees F, about 5-7 minutes.

Step 4 –Add the garlic to the chicken pieces and stir until fragrant, about 1 minute.

Step 5 –Stir the wine, the lemon juice, and the lemon zest into the chicken mixture and bring to a simmer.

Step 6 –Transfer the skillet from the heat and stir in the spinach and the cooked pasta.

Step 7 –Cover the skillet and let the pasta mixture stand, just until the spinach has wilted.

Step 8 –Top the pasta mixture with the parmesan cheese and serve.
