Cinna-brown Carrots

Ingredients

  • 2 pounds carrots, halved lengthwise
  • 2 tablespoons olive oil, plus more for greasing a baking sheet
  • kosher salt, to taste
  • freshly ground black pepper, to taste
  • 1/4 cup unsalted butter
  • 1/4 cup brown sugar, packed
  • zest of 1 orange
  • 1 teaspoon molasses
  • 1/4 teaspoon ground cinnamon
  • ground nutmeg, to taste

Directions

Step 1 –Preheat the oven to 375 degrees F.

Step 2 –Lightly oil a baking sheet.

Step 3 –Place the carrots in a single layer on the prepared baking sheet.

Step 4 –Add the olive oil, the salt, and the pepper to the carrots and gently toss to combine.

Step 5 –Bake the carrots until they are tender, about 10-12 minutes.

Step 6 –In a small saucepan over medium heat, combine the butter, the brown sugar, the orange zest, the molasses, the cinnamon, and the nutmeg and cook, stirring constantly, until the sugar has dissolved and the mixture is bubbly, about 4-5 minutes.

Step 7 –Reduce the sauce to a simmer, stir in the carrots, and cook, stirring occasionally, until they are glazed and heated through, about 3-4 minutes.
