Cinnamon Apple Surprise Bake

So, the surprise in the Cinnamon Apple Surprise Bake is that it’s base is actually quinoa. The other surprise is how much you’ll crave quinoa for breakfast again after giving this dish a taste! Spiced with cinnamon and nutmeg for a wholesome, warming flavor, the quinoa is cooked until tender with fresh, crisp fruit, crunchy nuts, and smoky maple syrup. It’s just the right amount of sweet and so nourishing, you’ll be surprised how much energy you have for the rest of the day! Oh hey, that’s another surprise in the Cinnamon Apple Surprise Bake!

Ingredients

  • 1 cup quinoa, uncooked
  • 1 1/2 teaspoons cinnamon
  • 1/2 teaspoon nutmeg
  • 1/8 teaspoon ground cloves
  • 2 apples, peeled and diced
  • 1/4 cup raisins
  • 2 eggs
  • 2 cups vanilla soy milk
  • 1/4 cup maple syrup
  • 1/3 cup almonds, chopped

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Lightly grease a 7×11-inch baking dish or an 8×8-inch square baking dish.

Step 3 –In a small bowl, mix the quinoa with the cinnamon, the nutmeg, and the cloves.

Step 4 –Pour the quinoa mixture into the prepared dish.

Step 5 –Sprinkle the apples and the raisins on top of the quinoa.

Step 6 –In the same bowl you used to mix the quinoa, beat the eggs.

Step 7 –Whisk the soy milk and the maple syrup into the beaten eggs.

Step 8 –Pour the egg mixture over the top of the apple-raisin layer.

Step 9 –Lightly stir the fruit and the quinoa, to just partially submerge the mixture.

Step 10 –Sprinkle the almonds on top of the quinoa-egg mixture.

Step 11 –Bake until the casserole is mostly set with only a small amount of liquid left, about 1 hour.

Step 12 –Allow the bake to cool.

Step 13 –Cover and refrigerate for at least 8 hours and up to overnight.

Step 14 –Slice and microwave before serving.
