Ingredients
For the crumb topping:
- 1/2 cup flour, plain or whole wheat
- 1/2 cup brown sugar
- 1 teaspoon cinnamon
- 1/4 cup butter
For the bread:
- 1 3/4 cups whole wheat flour
- 1/4 cup cornstarch or whole wheat flour
- 2 teaspoons ground cinnamon
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 2 large eggs
- 1 cup bananas, mashed
- 3/4 cup sugar, or to taste
- 1/3 cup oil
- 1/2 cup Greek yogurt
Directions
Step 1 –Preheat the oven to 360 degrees F.
Step 2 –Grease and line a 9×5-inch loaf pan.
Step 3 –Place 1/2 cup of flour with the brown sugar and 1 teaspoon of cinnamon in a medium bowl.
Step 4 –Mix the butter into the mixture, rubbing it with your fingers to form crumbs.
Step 5 –Refrigerate the crumb mixture until ready to use.
Step 6 –In a large bowl, combine 1 3/4 cups of whole wheat flour, 1/4 cup of cornstarch, 2 teaspoons of cinnamon, the baking powder, and the salt, stirring until well combined.
Step 7 –Stir the eggs, banana, sugar, oil, and Greek yogurt together in a separate large measuring jug until well combined.
Step 8 –Pour the wet ingredient mixture into the dry ingredient mixture and fold together until the flour is just moistened; a few lumps remaining are fine.
Step 9 –Place the batter in the prepared loaf tin.
Step 10 –Sprinkle the top with the crumb mixture.
Step 11 –Bake until a toothpick inserted comes out clean, about 50-60 minutes.
Step 12 –Cool the bread in the pan for 10 minutes.
Step 13 –Transfer the bread to a wire rack to cool completely.
Step 14 –Serve.
