Ingredients

  • 1 3/4 pounds pizza dough
  • all-purpose flour, for the work surface
  • 1 cup pizza sauce
  • 1 cup ricotta
  • 1/2 cup pepperoni
  • 1 cup mozzarella, shredded
  • extra-virgin olive oil, for brushing
  • kosher salt, to taste

Directions

Step 1 –Preheat the oven to 500 degrees F.

Step 2 –Grease two large baking sheets with cooking spray.

Step 3 –Divide the pizza dough into 4 pieces.

Step 4 –On a lightly floured surface, roll each piece of dough out into an 8-inch circle, about 1/4-inch thick.

Step 5 –Spoon the pizza sauce in the middle of the dough.

Step 6 –Dot the sauce in the dough with the ricotta.

Step 7 –Top with the pepperoni and mozzarella.

Step 8 –Gently fold the dough in half, dampening the seams with water and pinching them together.

Step 9 –Crimp the edges of the calzones all around.

Step 10 –Transfer the calzones to the prepared baking sheets.

Step 11 –Brush the tops of each calzone with the olive oil and sprinkle with the kosher salt.

Step 12 –Using kitchen scissors or a sharp knife, slit the tops of the calzones in 2 to 3 spots to create steam vents.

Step 13 –Bake until the tops are golden and the filling is bubbling, about 20 minutes, brushing the top with more olive oil halfway through.
