Coastal Christmas Bites

If you’re on the coast, you may not experience a white Christmas like the songs suggest, but you can still enjoy a holly jolly holiday! The best way to get the seaside festivities going is with Coastal Christmas Bites. After all, it doesn’t get much better than juicy shrimp wrapped with succulent bacon and brushed with butter and brown sugar. You’ll be rocking around the Christmas palm tree with Coastal Christmas Bites no matter if you’re by the sea or not!

Ingredients

  • 1 pound shrimp, cleaned, peeled, and deveined
  • 7 thick pieces bacon, cut into thirds
  • 4 tablespoons salted butter, melted
  • 1/4 cup brown sugar
  • 1/2 tablespoon chipotle powder, plus more to taste

Directions

Step 1 –Preheat the oven to 400 degrees F.

Step 2 –Line a baking sheet with foil.

Step 3 –Wrap each of the shrimp with 1 slice of the bacon and secure with a toothpick. Place on the prepared baking sheet.

Step 4 –In a bowl, mix the melted butter, the brown sugar, and the chipotle powder.

Step 5 –Brush each of the bacon-wrapped shrimp liberally with the butter mixture, using about 2/3 of it for all the shrimp bites. Save the remaining butter mixture for basting.

Step 6 –Bake the shrimp until cooked through at 120 degrees F, about 4-5 minutes.

Step 7 –Transfer the shrimp from the oven and switch the oven to broil.

Step 8 –Brush the shrimp with the remaining butter mixture.

Step 9 –Broil the coated shrimp until bubbly and 145 degrees F internally, about 1-2 minutes.

Step 10 –Serve.
