Coastal Thanksgiving Stuffing

Coastal Thanksgiving Stuffing could just as easily be named Tropical Thanksgiving Stuffing or Dessert Stuffing and be just as accurate (and delicious)! This dish goes in a sweeter direction than other stuffings, adding plenty of rich sugar and butter to the tender cubed bread and adding juicy, tangy, golden pineapple for that white sand beaches feeling in every bite. A little brown sugar on top is just the marvelous last touch that makes Coastal Thanksgiving Stuffing a real treat whether you’re landlocked or by the sea. After the Thanksgiving meal this year, you may seek out a hammock to rest in to keep those tropical vibes going!

Ingredients

  • 4 ounces butter, softened, plus more for greasing the baking dish
  • 3/4 cup granulated sugar
  • 4 large eggs
  • 1/8 teaspoon salt
  • 6 ounces bread, cut into 1-inch cubes
  • 1 (20-ounce) can crushed pineapple, undrained
  • 2 tablespoons brown sugar, optional

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Butter a 1 1/2-2-quart baking dish.

Step 3 –In a large mixing bowl with an electric mixer, beat the softened butter with the granulated sugar until light and fluffy, about 3-4 minutes.

Step 4 –Add the eggs one at a time, beating well after each addition.

Step 5 –Beat the salt into the butter mixture.

Step 6 –Fold the pineapple into the batter until well-blended.

Step 7 –Add the bread cubes to the batter, a little at a time, stirring to blend.

Step 8 –Transfer the stuffing mixture to the prepared baking dish.

Step 9 –Sprinkle the stuffing with 2 tablespoons of the brown sugar.

Step 10 –Bake the stuffing until puffy, lightly browned, and bubbly, about 55-65 minutes.
